Cauliflower Mac


I cannot believe how fast summer and fall came and left (I is still fall, but it does not feel like it anymore!), but winter means hearty, warm comfort foods! Thankfully comfort foods can still be good for you and not weigh you down - and I know you are going to LOVE this cauliflower mac-n-cheese!


This cheeze sauce is made from one of my favorite combinations - potatoes, zucchini, onion, carrots, and red pepper! So easy, so delicious, so satisfying!

Serves: 2-4


  • 1 Head of cauliflower
  • 1 Large potato, diced
  • 1/2 Cup raw cashews (soaked or boil for 15-20 minutes)
  • 1 Large peeled carrot
  • 1/2 Large zucchini
  • 1/2 Large onion
  • 1/2 Red pepper
  • 1/4 C non-dairy milk
  • 1 1/2 Tbs lemon juice
  • 3 Tbs nutritional yeast 
  • 1 Tsp garlic powder
  • 1/2 Tsp onion powder
  • 2 Tsp salt
  • 1/2 - 1 Tsp pepper
  • 1/2 Tsp liquid smoke
  • 1/2 Cup panko bread crumbs

Optional Toppings:

  • Green onions
  • Vegan bacon
  • Onion straws
  • Vegan sour cream
  • Hot sauce


  • Preheat oven to 415° F 
  • Steam cauliflower until soft and put it in a baking dish (I used an 8X8 but other sizes are fine)
  • Boil potato, carrot, zucchini, and onion until cooked. Combine with nutritional yeast, liquid smoke, and seasonings in blender until smooth.
  • Pour cheeze sauce over cauliflower in baking dish and mix until completely covered
  • Top with panko crumbs and put in the oven for 25 minutes on 415° F
  • Take out of oven and let it rest for 10 minutes
  • Enjoy!!

Egg Roll


One thing I have really missed since going vegan is a good egg roll. One day I decided it was time to stop missing them, and create my own! I cooked these in an air fryer, but you can definitely cook them in an oven as well!

  • Vegan egg roll wrapers
  • 2 Poblano peppers
  • 1/2 Yellow onion
  • 1 Red pepper
  • 1/2 cup Black beans
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp. Cumin 


  • Dice peppers & onions and combine in a bowl
  • Add black beans and seasonings to bowl - mix well
  • Put roughly 1/8 cup of mixture in center of egg roll wrapper, follow instructions on packaging to fold
  • Put in air fryer at 370 for roughly 5 minutes, flip, put in for 5 more minutes
  • Continue flipping and adding time until all sides of egg roll are brown
  • Let cool, then eat! 

Jalapeno Sweet Potato Cheese


This DELICIOUS sauce goes great as a dip, on top of vegan cheese steaks, on cold sandwiches, in salads, you name it!

Serves: 4-6


  • 1 large sweet potato, diced into 1 inch cubes
  • 2-3 jalapenos - minced
  • 1/4 cup almond (or other non-dairy, unflavored) milk
  • 3 tbsp nutritional yeast
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1/2 - 1 tbsp hot sauce (I like Cholula or Frank's)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt


  • Boil sweet potatoes until it is easy to put a fork through them. Drain and let it cook once cooked.
  • While you are cooking the sweet potatoes, mince the jalapenos and put them in a small pan on medium heat until soft.
  • Put sweet potato & all ingredients except for the jalapenos into food processor (you can also use a blender). Blend until  you get the consistency you are looking for.
  • Now is the fun part - taste test! I always tend to add more seasoning along the way, but I definitely like a TON. Once you have the taste you are looking for, add the jalapenos, and SERVE!
  • I recommend making some vegan cheese steaks, using it as a dipping sauce, or mixing it into tacos! I have also put it on sandwiches - it is multi-functional!
